El jitomate, un ingrediente indispensable en la dieta nacional, ha registrado un incremento exponencial en su precio comercial. Seg\u00fan los reportes m\u00e1s recientes del Grupo Consultor de Mercados Agr\u00edcolas (GCMA), el costo de esta hortaliza se ha triplicado desde que sale de la unidad de producci\u00f3n hasta que llega a las manos del consumidor final, generando una distorsi\u00f3n de mercado que afecta tanto a la seguridad alimentaria como al \u00edndice inflacionario del pa\u00eds.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Cifras y Contrastes<\/h3>\n\n\n\n<p>La escalada de precios no es uniforme, pero la tendencia al alza es generalizada en todo el territorio nacional. Mientras que en las zonas de cultivo los productores enfrentan m\u00e1rgenes de ganancia reducidos, en las tiendas de autoservicio y mercados locales los precios han alcanzado niveles prohibitivos para gran parte de la poblaci\u00f3n.<\/p>\n\n\n\n<figure class=\"wp-block-table\"><table class=\"has-fixed-layout\"><tbody><tr><th class=\"has-text-align-left\" data-align=\"left\">Concepto<\/th><th class=\"has-text-align-left\" data-align=\"left\">Rango de Precio (MXN)<\/th><\/tr><tr><td>Pago promedio al productor (Campo)<\/td><td>$15.00 &#8211; $22.00 por kilo<\/td><\/tr><tr><td>Precio en Centrales de Abasto<\/td><td>$35.00 &#8211; $48.00 por kilo<\/td><\/tr><tr><td><strong>Precio final al consumidor<\/strong><\/td><td><strong>$50.00 &#8211; $80.00 por kilo<\/strong><\/td><\/tr><tr><td>Picos m\u00e1ximos registrados<\/td><td>$98.00 por kilo<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<p>Este fen\u00f3meno se traduce en una brecha de intermediaci\u00f3n que supera el 250% en muchos casos. El consumidor final est\u00e1 pagando casi cuatro veces el valor original del producto, una situaci\u00f3n que los analistas califican como insostenible a largo plazo.<\/p>\n\n\n\n<p>La crisis del precio del jitomate no responde a una sola causa, sino a una combinaci\u00f3n de factores estructurales y coyunturales que han colapsado la estabilidad del mercado:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Factores Clim\u00e1ticos y Escasez:<\/strong>\u00a0La variabilidad clim\u00e1tica extrema ha mermado la producci\u00f3n en estados clave. Sequ\u00edas prolongadas seguidas de heladas at\u00edpicas han reducido el rendimiento por hect\u00e1rea, limitando la oferta disponible frente a una demanda que se mantiene constante.<\/li>\n\n\n\n<li><strong>Costos de Insumos y Producci\u00f3n:<\/strong>\u00a0El sector agr\u00edcola ha absorbido incrementos significativos en el costo de los fertilizantes y plaguicidas. Esto obliga a los agricultores a intentar ajustar sus precios de salida para evitar trabajar bajo p\u00e9rdida, aunque son el eslab\u00f3n que menos se beneficia del alza final.<\/li>\n\n\n\n<li><strong>Log\u00edstica y Transporte:<\/strong>\u00a0El aumento en los precios de los combustibles ha encarecido el flete de mercanc\u00edas. Dado que el jitomate es un producto altamente perecedero, requiere transporte especializado y r\u00e1pido, lo que eleva el costo operativo de distribuci\u00f3n.<\/li>\n\n\n\n<li><strong>La Especulaci\u00f3n en la Intermediaci\u00f3n:<\/strong>\u00a0El \u00abcoyotaje\u00bb o la presencia de m\u00faltiples intermediarios a\u00f1ade valor al precio final sin agregar valor real al producto. En el trayecto del campo a la mesa, el jitomate pasa por manos de acopiadores, transportistas y distribuidores mayoristas, cada uno de los cuales aplica un margen de ganancia que infla el costo final.<\/li>\n<\/ol>\n\n\n\n<h3 class=\"wp-block-heading\">Impacto en la Econom\u00eda Nacional e Inflaci\u00f3n<\/h3>\n\n\n\n<p>El jitomate es uno de los componentes con mayor peso en el \u00cdndice Nacional de Precios al Consumidor (INPC). Su encarecimiento tiene un efecto domin\u00f3:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Inflaci\u00f3n Alimentaria:<\/strong>\u00a0El alza contribuye directamente al aumento de la inflaci\u00f3n general, presionando al Banco de M\u00e9xico a mantener pol\u00edticas monetarias restrictivas.<\/li>\n\n\n\n<li><strong>Sector Gastron\u00f3mico:<\/strong>\u00a0Restaurantes y fondas peque\u00f1as han tenido que modificar sus men\u00fas o reducir porciones para absorber el costo sin perder clientes.<\/li>\n\n\n\n<li><strong>P\u00e9rdida de Poder Adquisitivo:<\/strong>\u00a0Las familias mexicanas, especialmente aquellas en los deciles de ingresos m\u00e1s bajos, se ven obligadas a sustituir el jitomate por otros vegetales o simplemente a reducir su consumo de verduras frescas.<\/li>\n<\/ul>\n\n\n\n<p>Los analistas del sector agr\u00edcola advierten que, si bien los precios de los productos agr\u00edcolas suelen ser estacionales, la magnitud de este incremento sugiere problemas estructurales en la cadena de suministro. Sin una intervenci\u00f3n que mejore la infraestructura de almacenamiento y reduzca la dependencia de intermediarios, la volatilidad seguir\u00e1 siendo la norma.<\/p>\n\n\n\n<p>Se espera que, con la entrada de nuevas cosechas de ciclos productivos alternos, el precio pueda estabilizarse ligeramente hacia finales del trimestre; sin embargo, es poco probable que regrese a los niveles observados en a\u00f1os anteriores debido a la inflaci\u00f3n acumulada en los costos de producci\u00f3n.<\/p>\n\n\n\n<p>En conclusi\u00f3n, el jitomate se ha convertido en el s\u00edmbolo de una crisis alimentaria latente. Mientras el consumidor sufre el impacto en su bolsillo, el sector productivo sigue enfrentando riesgos clim\u00e1ticos y econ\u00f3micos que amenazan la viabilidad de la agricultura
